Quince

Cydonia oblonga

سفرجل

Too hard and too sour to eat raw, and completely transformed by cooking into the fragrant preserve that fills Lebanese kitchens in autumn. A gnarled, characterful small tree with large pale pink flowers.

How to care
Full sun in soil that stays moist; quince tolerates heavier ground than most fruit trees and will handle a damp corner. Self-fertile, so one tree crops on its own. Prune lightly in winter to keep the centre open, since fruit forms on the tips of the previous year's growth and hard pruning removes it. Watch for leaf blight in humid springs and clear fallen leaves to reduce carryover.
