One of the toughest trees in this catalogue and deeply rooted in Lebanese food culture through carob molasses. Evergreen, drought-proof once established, and capable of holding dry stony slopes where little else will grow.

- How to care
- Full sun and sharply drained soil, including poor, rocky, and alkaline ground. Water through the first two summers and then effectively leave it alone; carob is exceptionally drought tolerant once rooted. Slow growing, long-lived, and largely trouble-free. Note that trees are usually either male or female, so a female tree needs a male nearby to set pods. Prune minimally, only to shape.
