One of the toughest trees in this catalogue and deeply rooted in Lebanese food culture through carob molasses. Evergreen, drought-proof once established, and capable of holding dry stony slopes where little else will grow.

How to care
Full sun and sharply drained soil, including poor, rocky, and alkaline ground. Water through the first two summers and then effectively leave it alone; carob is exceptionally drought tolerant once rooted. Slow growing, long-lived, and largely trouble-free. Note that trees are usually either male or female, so a female tree needs a male nearby to set pods. Prune minimally, only to shape.
